Bacon Cheddar Gnocchi Soup

A warm and hearty soup that combines the rich flavors of bacon and cheddar with soft gnocchi, perfect for chilly evenings.

Ingredients

  • 4 slices bacon
  • 2 cups chicken broth
  • 1 cup milk
  • 1 package gnocchi
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped onion
  • 1 clove garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Cook the bacon in a large pot over medium heat until crispy. Remove and crumble.
  2. In the same pot, add the onion and garlic, cooking until softened.
  3. Add chicken broth and milk, bringing to a simmer.
  4. Stir in gnocchi and thyme, cooking until gnocchi is tender.
  5. Remove from heat and stir in cheddar cheese until melted.
  6. Serve garnished with crumbled bacon.

Notes

  • For extra flavor, add a pinch of red pepper flakes.
