Bacon Egg and Cheese Breakfast Quesadillas

Delicious bacon egg and cheese breakfast quesadillas made with turkey bacon, perfect for a quick and satisfying morning meal.

Ingredients

  • 4 large eggs
  • 1/2 cup shredded cheddar cheese
  • 4 slices turkey bacon
  • 2 flour tortillas
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a skillet, cook the turkey bacon over medium heat until crispy. Remove and chop.
  2. In the same skillet, whisk the eggs with salt and pepper, then scramble until cooked through.
  3. Add in the cheese and chopped bacon, stirring until the cheese melts.
  4. Place half of the egg mixture on one tortilla, fold, and cook in olive oil until golden brown on both sides.
  5. Repeat with the second tortilla and serve hot.

Notes

  • These quesadillas are best served immediately but can be enjoyed later as leftovers.
