  • 2 pounds baby potatoes
  • 4 strips turkey bacon
  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Boil the baby potatoes in salted water until tender, about 15 minutes.
  2. Crisp the turkey bacon in a skillet and crumble it once cooled.
  3. In a bowl, whisk together balsamic vinegar, olive oil, garlic powder, salt, and black pepper.
  4. Drain the potatoes and let them cool slightly, then cut them into halves.
  5. Toss the potatoes with the balsamic dressing, crumbled bacon, and parsley.
