Blueberry Cheesecake Stuffed French Toast

  • 8 slices bread
  • 1 cup blueberries
  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 2 teaspoons vanilla extract
  • 4 large eggs
  • 1 cup milk
  • 1 teaspoon cinnamon
  • 1 tablespoon butter

Instructions

  1. In a mixing bowl, combine cream cheese, powdered sugar, and vanilla extract until smooth.
  2. Spread the cream cheese mixture onto 4 slices of bread and top with blueberries.
  3. Place the remaining slices of bread on top to make sandwiches.
  4. In a separate bowl, whisk together eggs, milk, and cinnamon.
  5. Heat butter in a skillet over medium heat.
  6. Dunk each sandwich into the egg mixture, allowing the bread to soak.
  7. Cook each sandwich in the skillet until golden brown on both sides.
