  • 4 large potatoes
  • 1 cup shredded cheese
  • 1/2 cup turkey bacon, cooked and chopped
  • 1/2 cup chicken ham, diced
  • 1 cup taco seasoning
  • 1/4 cup sour cream

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Scrub the potatoes and pierce each with a fork.
  3. Bake the potatoes for 45-60 minutes until tender.
  4. Meanwhile, in a bowl, mix together the cheese, turkey bacon, chicken ham, and taco seasoning.
  5. Once the potatoes are done, remove them from the oven and let them cool slightly.
  6. Slice each potato open and fluff the insides with a fork.
  7. Top with the cheese mixture and return to the oven to melt the cheese.
  8. Serve hot with a dollop of sour cream on top.

Notes

  • For an extra kick, add jalapeños to the filling.
  • Feel free to substitute regular bacon if preferred.
