Chicken Burrito Casserole

  • 2 cups cooked chicken, shredded
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, drained
  • 1 cup salsa
  • 2 cups cooked rice
  • 2 cups shredded cheese
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the chicken, black beans, corn, salsa, rice, chili powder, cumin, garlic powder, salt, and pepper.
  3. Transfer the mixture to a greased 9×13 inch baking dish and spread evenly.
  4. Top with shredded cheese.
  5. Bake for 25-30 minutes until the cheese is melted and bubbly.
