Chicken Burrito Casserole

Delicious and hearty Chicken Burrito Casserole perfect for a family meal.

  • 2 cups cooked chicken, shredded
  • 1 cup rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 packet taco seasoning
  • 2 cups salsa
  • 2 cups shredded cheese
  • 1 cup sour cream

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the cooked chicken, rice, black beans, corn, and taco seasoning.
  3. Spread half of the mixture in a baking dish.
  4. Layer half of the salsa and half of the cheese on top.
  5. Add the remaining chicken mixture followed by the remaining salsa, cheese, and dollops of sour cream.
  6. Bake for 25-30 minutes until heated through and the cheese is bubbly.
