  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 1 teaspoon minced garlic
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup coleslaw mix
  • 1/4 cup mayonnaise
  • 1 tablespoon additional lime juice
  • 2 tablespoons chopped fresh cilantro
  • 8 corn tortillas

Instructions

  1. In a bowl, combine olive oil, lime juice, garlic, cumin, paprika, salt, and pepper. Add shrimp and marinate for 15 minutes.
  2. Heat a skillet over medium-high heat and cook marinated shrimp for 2-3 minutes on each side until cooked through.
  3. In another bowl, mix coleslaw, mayonnaise, additional lime juice, and cilantro.
  4. Warm the tortillas in a dry skillet.
  5. Assemble tacos by placing shrimp on tortillas and topping with creamy slaw. Serve immediately.
