- 1 pound shrimp, peeled and deveined
- 2 tablespoons olive oil
- 2 tablespoons fresh lime juice
- 1 teaspoon minced garlic
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup coleslaw mix
- 1/4 cup mayonnaise
- 1 tablespoon additional lime juice
- 2 tablespoons chopped fresh cilantro
- 8 corn tortillas
- In a bowl, combine olive oil, lime juice, garlic, cumin, paprika, salt, and pepper. Add shrimp and marinate for 15 minutes.
- Heat a skillet over medium-high heat and cook marinated shrimp for 2-3 minutes on each side until cooked through.
- In another bowl, mix coleslaw, mayonnaise, additional lime juice, and cilantro.
- Warm the tortillas in a dry skillet.
