  • 1 cup jasmine rice
  • 1 pound chicken thighs, boneless and skinless
  • 1 can (13.5 oz) coconut milk
  • 1 cup chicken broth
  • 2 tablespoons soy sauce
  • 1 tablespoon ginger, minced
  • 2 cloves garlic, minced
  • 1 tablespoon lime juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 green onions, sliced

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. In a medium saucepan, combine the rice, coconut milk, chicken broth, soy sauce, minced ginger, minced garlic, lime juice, salt, and black pepper.
  3. Bring to a boil over medium heat, then reduce to low, cover, and simmer for 15-20 minutes until rice is cooked and liquid is absorbed.
  4. While the rice is cooking, heat a skillet over medium-high heat and cook the chicken thighs until golden brown and cooked through, about 6-7 minutes per side.
  5. Once the chicken is cooked, slice it and serve it over the coconut rice.
  6. Garnish with sliced green onions.
