- 1 cup jasmine rice
- 1 pound chicken thighs, boneless and skinless
- 1 can (13.5 oz) coconut milk
- 1 cup chicken broth
- 2 tablespoons soy sauce
- 1 tablespoon ginger, minced
- 2 cloves garlic, minced
- 1 tablespoon lime juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 green onions, sliced
- Rinse the jasmine rice under cold water until the water runs clear.
- In a medium saucepan, combine the rice, coconut milk, chicken broth, soy sauce, minced ginger, minced garlic, lime juice, salt, and black pepper.
- Bring to a boil over medium heat, then reduce to low, cover, and simmer for 15-20 minutes until rice is cooked and liquid is absorbed.
- While the rice is cooking, heat a skillet over medium-high heat and cook the chicken thighs until golden brown and cooked through, about 6-7 minutes per side.
- Once the chicken is cooked, slice it and serve it over the coconut rice.
- Garnish with sliced green onions.
