Cranberry, Pecan, Goat Cheese, Sweet Potato Bites

A delicious appetizer featuring sweet potatoes, goat cheese, and cranberries.

Ingredients

  • 2 medium sweet potatoes
  • 8 ounces goat cheese
  • 1 cup chopped pecans
  • 1 cup dried cranberries
  • 2 tablespoons honey
  • 1 teaspoon salt
  • 1 teaspoon pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Bake sweet potatoes until tender, about 45 minutes.
  3. Let cool, then peel and mash.
  4. Stir in goat cheese, pecans, cranberries, honey, salt, and pepper.
  5. Form mixture into bite-sized balls and place on a baking sheet.
  6. Bake for an additional 15 minutes.
  7. Serve warm and enjoy!

Notes

  • Can substitute walnuts for pecans.
  • Best served fresh but can be stored for up to 2 days in the fridge.
