- 2 medium sweet potatoes
- 8 ounces goat cheese
- 1 cup chopped pecans
- 1 cup dried cranberries
- 2 tablespoons honey
- 1 teaspoon salt
- 1 teaspoon pepper
- Preheat the oven to 400°F (200°C).
- Bake sweet potatoes until tender, about 45 minutes.
- Let cool, then peel and mash.
- Stir in goat cheese, pecans, cranberries, honey, salt, and pepper.
- Form mixture into bite-sized balls and place on a baking sheet.
- Bake for an additional 15 minutes.
