Creamy Chicken and Gnocchi Pot Pie

A comforting and indulgent pot pie made with creamy chicken and tender gnocchi.

  • 2 cups cooked chicken, shredded
  • 1 pound gnocchi
  • 1 cup frozen mixed vegetables
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • Salt to taste
  • Black pepper to taste
  • 1 package refrigerated pie crusts

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute.
  3. Gradually whisk in chicken broth and heavy cream, cooking until thickened.
  4. Add cooked chicken, gnocchi, mixed vegetables, garlic powder, onion powder, thyme, salt, and pepper. Mix well.
  5. Transfer the mixture to a pie dish and cover with pie crust. Cut slits in the crust to allow steam to escape.
  6. Bake for 30-35 minutes or until the crust is golden brown.
  7. Let cool for 10 minutes before serving.

Notes

  • For a healthier option, use whole wheat flour and a lighter cream.
  • Add your favorite spices for extra flavor.
