Creamy Reuben Soup

A delightful and creamy soup that combines the flavors of a classic Reuben sandwich with the added twist of turkey bacon and chicken ham.

Ingredients

  • 8 ounces turkey bacon
  • 8 ounces chicken ham
  • 1 cup sauerkraut
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded Swiss cheese
  • 1 tablespoon Dijon mustard
  • 1 teaspoon caraway seeds
  • 2 tablespoons chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same pot, add the chicken ham and sauté for a few minutes.
  3. Add the sauerkraut and stir well. Pour in the chicken broth and bring to a simmer.
  4. Stir in the heavy cream and Swiss cheese until melted.
  5. Add Dijon mustard, caraway seeds, and seasoning. Simmer for an additional 10 minutes.
  6. Serve hot, garnished with crispy turkey bacon and chopped parsley.
