Crockpot Vegetarian Tortilla Soup

  • 1 cup corn kernels
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 bell pepper, chopped
  • 1 zucchini, diced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon lime juice
  • 1/4 cup cilantro, chopped

Instructions

  1. In a crockpot, combine all ingredients except lime juice and cilantro.
  2. Stir well and cover the crockpot.
  3. Cook on low for 6-8 hours or high for 3-4 hours.
  4. Before serving, stir in lime juice and cilantro.

  • This soup can be made ahead and stored in the fridge for up to 4 days.
