Curry Soup with Dumplings

A delicious and warming curry soup that features fluffy dumplings, perfect for any day of the week.

  • 1 tablespoon vegetable oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons curry powder
  • 4 cups vegetable broth
  • 1 can coconut milk
  • 2 cups mixed vegetables (carrots, peas, and bell peppers)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup water

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the diced onion and sauté until translucent.
  2. Add the minced garlic and grated ginger, cooking for an additional minute.
  3. Stir in the curry powder and cook for another minute until fragrant.
  4. Pour in the vegetable broth and coconut milk, bringing the mixture to a boil.
  5. Add the mixed vegetables and let it simmer for about 10 minutes.
  6. In a separate bowl, combine the flour, baking powder, and salt for the dumplings. Gradually stir in the water until a dough forms.
  7. Drop spoonfuls of the dumpling dough into the simmering soup. Cover and cook for 15 minutes without lifting the lid.
  8. Season the soup with salt and black pepper to taste before serving.

Notes

  • For extra flavor, add some chopped fresh cilantro on top before serving.
  • This soup can be made in advance and reheated easily.
