- 1 tablespoon vegetable oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tablespoons curry powder
- 4 cups vegetable broth
- 1 can coconut milk
- 2 cups mixed vegetables (carrots, peas, and bell peppers)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup water
- In a large pot, heat the vegetable oil over medium heat. Add the diced onion and sauté until translucent.
- Add the minced garlic and grated ginger, cooking for an additional minute.
- Stir in the curry powder and cook for another minute until fragrant.
- Pour in the vegetable broth and coconut milk, bringing the mixture to a boil.
- Add the mixed vegetables and let it simmer for about 10 minutes.
- In a separate bowl, combine the flour, baking powder, and salt for the dumplings. Gradually stir in the water until a dough forms.
- Drop spoonfuls of the dumpling dough into the simmering soup. Cover and cook for 15 minutes without lifting the lid.
- Season the soup with salt and black pepper to taste before serving.
Notes
- For extra flavor, add some chopped fresh cilantro on top before serving.
