Date Brownie Balls

  • 1 cup Medjool dates, pitted
  • 1 cup walnuts
  • 1/2 cup cocoa powder
  • 1/4 cup almond butter
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup shredded coconut (optional)

Instructions

  1. In a food processor, combine the pitted Medjool dates and walnuts. Pulse until finely chopped.
  2. Add the cocoa powder, almond butter, vanilla extract, and salt to the food processor. Blend until the mixture is well combined and sticky.
  3. If using, fold in the shredded coconut.
  4. Use your hands to form small balls from the mixture and place them on a baking sheet lined with parchment paper.
  5. Chill the balls in the refrigerator for at least 30 minutes before serving.

Notes

  • Store leftovers in an airtight container in the refrigerator.
  • These brownie balls can also be rolled in cocoa powder or additional shredded coconut for added flavor.
