- 1 cup pitted dates
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup chopped walnuts (optional)
- Preheat your oven to 350°F (175°C).
- In a bowl, mix together the softened butter and brown sugar until creamy.
- Add the egg and vanilla extract, and mix until fully integrated.
- In another bowl, combine the flour, baking soda, and salt.
- Gradually add the dry mixture to the wet mixture, stirring until combined.
- Fold in the chopped dates and walnuts.
- Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Allow to cool before serving.
Notes
- For an extra touch, sprinkle some sea salt on top of the cookies before baking.
- These cookies can also be made with other dried fruits if you prefer.
