- 8 ounces elbow macaroni
- 6 hard-boiled eggs, chopped
- 1/2 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1/4 cup celery, chopped
- 1/4 cup red onion, finely chopped
- 1 cup turkey bacon, cooked and chopped
- 1/4 cup fresh parsley, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Cook macaroni according to package instructions. Drain and set aside.
- In a large bowl, combine chopped eggs, mayonnaise, Dijon mustard, celery, red onion, turkey bacon, and parsley.
- Fold in the cooked macaroni and mix until well combined.
- Season with salt and pepper to taste.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- For an extra kick, add a dash of hot sauce to the mixture.
