Ingredients

  • 1 pound boneless, skinless chicken breast
  • 1 cup brown rice
  • 1 can black beans, rinsed and drained
  • 1 cup corn, frozen or canned
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 teaspoons taco seasoning
  • 1/2 cup salsa
  • 1/2 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • 1/4 cup low-fat cheese

Instructions

  1. Cook the brown rice according to package instructions.
  2. Meanwhile, heat a skillet over medium-high heat and add diced onion and bell pepper. Sauté until tender.
  3. Add the chicken breast to the skillet and sprinkle with taco seasoning. Cook until the chicken is cooked through.
  4. Once the chicken is done, shred it and mix it with black beans, corn, and salsa.
  5. To serve, layer the rice, chicken mixture, lettuce, tomatoes, cilantro, and cheese in bowls.
