- 4 pieces chicken thighs
- 2 slices turkey bacon
- 1 cup mushrooms, sliced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 tablespoon Dijon mustard
- 1 teaspoon thyme
- 1 onion, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- Preheat the oven to 375°F (190°C).
- In a large skillet, cook the turkey bacon until crispy, then remove and set aside.
- In the same skillet, brown the chicken thighs on both sides.
- Add onions and garlic, cooking until they are soft.
- Mix in mushrooms, followed by heavy cream, chicken broth, and Dijon mustard.
- Add thyme, salt and pepper, and stir well.
- Transfer the mixture to a casserole dish and top with turkey bacon.
- Bake for 30-35 minutes, or until chicken is cooked through.
