Fresh Raspberry Tiramisu

A delightful twist on the classic tiramisu, featuring fresh raspberries for a burst of flavor in every bite.

  • 8 ounces mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh raspberries
  • 1 cup brewed coffee, cooled
  • 1 tablespoon coffee liqueur (optional)
  • 20 ladyfinger cookies
  • 2 tablespoons cocoa powder for dusting

Instructions

  1. In a large bowl, beat the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract until soft peaks form.
  2. In a shallow dish, combine the brewed coffee and coffee liqueur.
  3. Quickly dip each ladyfinger into the coffee mixture, ensuring they are soaked but not soggy.
  4. Layer half of the soaked ladyfingers in the bottom of a serving dish.
  5. Spread half of the mascarpone mixture over the ladyfingers.
  6. Sprinkle half of the fresh raspberries on top.
  7. Repeat the layers with the remaining ladyfingers, mascarpone mixture, and raspberries.
  8. Cover and refrigerate for at least 4 hours or overnight.
  9. Before serving, dust with cocoa powder.

Notes

  • For best results, use freshly brewed coffee.
  • Feel free to substitute raspberries with other berries if desired.
