  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • ½ cup unsalted butter
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 pound baby potatoes, halved

Instructions

  1. In a large skillet, heat olive oil over medium-high heat.
  2. Add the beef and season with salt and pepper. Brown the beef on all sides.
  3. Remove the beef from the skillet and set aside.
  4. In the same skillet, add butter and garlic, sautéing until fragrant.
  5. Add the potatoes and thyme; cook until the potatoes are tender.
  6. Return the beef to the skillet and toss to coat with garlic butter.
  7. Cook for an additional 2-3 minutes to heat through.
  8. Serve warm, garnished with fresh herbs if desired.

Notes

  • For a spicy kick, add crushed red pepper flakes while cooking.
