Garlic Parmesan Crockpot Chicken and Potatoes

  • 4 chicken thighs
  • 1 pound baby potatoes
  • 1/4 cup grated parmesan cheese
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chicken broth
  • 2 tablespoons olive oil

Instructions

  1. Place the chicken thighs at the bottom of the crockpot.
  2. Add the baby potatoes on top of the chicken.
  3. In a bowl, mix together the parmesan cheese, garlic, thyme, rosemary, salt, pepper, chicken broth, and olive oil.
  4. Pour the mixture over the chicken and potatoes in the crockpot.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is cooked through and the potatoes are tender.
