Grilled Balsamic Steak Salad with Gorgonzola & Corn

A delicious grilled steak salad featuring balsamic dressing, creamy Gorgonzola, and sweet corn.

Ingredients

  • 1 pound flank steak
  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh corn, cooked
  • 1/2 cup Gorgonzola cheese, crumbled
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat grill to medium-high heat.
  2. Season flank steak with salt, pepper, and olive oil.
  3. Grill steak for 6-7 minutes on each side for medium-rare.
  4. Remove steak and let it rest for 5 minutes before slicing.
  5. In a large bowl, combine salad greens, cherry tomatoes, corn, and Gorgonzola.
  6. Slice the steak thinly and add on top of the salad.
  7. Drizzle balsamic vinegar over the salad and toss gently to combine.
  8. Serve immediately.

Notes

  • For added flavor, marinate the steak in balsamic vinegar for a few hours before grilling.
  • This salad is great for meal prep; just keep dressing on the side until serving.
