Healthy Apple Pie Oatmeal Cookies

Delicious and healthy apple pie oatmeal cookies that are easy to make and guilt-free.

Ingredients

  • 1 cup rolled oats
  • 1/2 cup whole wheat flour
  • 1/2 cup unsweetened applesauce
  • 1/4 cup honey or maple syrup
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup diced apples
  • 1/4 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine oats, flour, cinnamon, nutmeg, baking powder, and salt.
  3. In another bowl, mix applesauce and honey (or maple syrup).
  4. Combine the wet and dry ingredients, then fold in the diced apples and walnuts.
  5. Drop spoonfuls of the dough onto the prepared baking sheet and flatten slightly.
  6. Bake for 10-12 minutes or until lightly golden.
  7. Allow to cool before serving.

Notes

  • For a vegan version, use maple syrup instead of honey.
  • These cookies can be made gluten-free by using gluten-free oats and flour.
