Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix together the oats, flour, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, combine the applesauce, honey (or maple syrup), and vanilla extract until smooth.
  4. Add the wet ingredients to the dry ingredients and mix until combined.
  5. Fold in the chopped apples and raisins or nuts if using.
  6. Drop spoonfuls of the mixture onto a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes, or until the cookies are lightly golden.
