Healthy Chicken & Sweet Potato Rice Bowl

Ingredients

  • 2 cups cooked brown rice
  • 1 pound boneless, skinless chicken breast
  • 2 medium sweet potatoes, diced
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Salt to taste
  • Black pepper to taste
  • 2 cups fresh spinach
  • 1 avocado, sliced

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss diced sweet potatoes with olive oil, paprika, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes.
  3. While the sweet potatoes are roasting, season chicken breasts with garlic powder, salt, and pepper. Grill or pan-sear chicken over medium heat until cooked through, about 6-7 minutes per side.
  4. Once cooked, let chicken rest for a few minutes, then slice.
  5. In a bowl, layer cooked brown rice, roasted sweet potatoes, sliced chicken, fresh spinach, and avocado.

Notes

  • Feel free to add your favorite spices to the chicken for extra flavor.
  • This bowl can be made ahead of time and stored in the refrigerator.
