Ingredients

  • 2 cups brown rice
  • 1 pound chicken breast, diced
  • 2 sweet potatoes, cubed
  • 1 tablespoon olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon paprika
  • Salt to taste
  • Pepper to taste
  • 1/4 cup green onions, sliced

Instructions

  1. Cook the brown rice according to package directions.
  2. In a bowl, toss the diced chicken with olive oil, garlic powder, paprika, salt, and pepper.
  3. In a large pan, cook the chicken over medium heat until golden and cooked through.
  4. Add the cubed sweet potatoes to the same pan, cooking until tender.
  5. Once rice is cooked, combine it with the chicken and sweet potatoes.
  6. Garnish with sliced green onions before serving.
