Instructions

  2. In the same pot, add diced onions and cook until translucent.
  3. Add minced garlic and cook for an additional minute, stirring frequently.

  5. Reduce heat, cover, and simmer until potatoes are tender, about 15-20 minutes.
  6. Stir in heavy cream, shredded cheese, thyme, and parsley. Cook until cheese is melted and soup is heated through.
