- 1 ½ cups crushed graham crackers
- ½ cup unsweetened cocoa powder
- 1 stick unsalted butter, melted
- 4 packages (8 oz each) cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 2 cups mixed berries (blackberries, raspberries, and blueberries)
- Preheat the oven to 350°F (175°C).
- In a bowl, mix the crushed graham crackers, cocoa powder, and melted butter; press into the bottom of a springform pan.
- In a large mixing bowl, beat the cream cheese and sugar until smooth.
- Add the vanilla and eggs, one at a time, mixing well after each addition.
- Pour the cream cheese mixture over the crust and tap to remove air bubbles.
- Add the mixed berries on top.
- Bake for 50-60 minutes until set, then allow to cool.
