  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 1/2 cup fresh raspberries
  • 2 large eggs
  • 1 cup lemon juice
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, sugar, and melted butter.
  3. Press the mixture into the bottom of a greased baking dish.
  4. In another bowl, whisk together the eggs, lemon juice, baking powder, and salt.
  5. Gently fold in the raspberries.
  6. Pour the lemon raspberry mixture over the crust.
  7. Bake for 25-30 minutes or until set.
  8. Allow to cool before slicing into bars.

Notes

  • For a sweeter twist, add powdered sugar on top.
  • Use frozen raspberries if fresh ones are not available.
