- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter, melted
- 1/2 cup fresh raspberries
- 2 large eggs
- 1 cup lemon juice
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine flour, sugar, and melted butter.
- Press the mixture into the bottom of a greased baking dish.
- In another bowl, whisk together the eggs, lemon juice, baking powder, and salt.
- Gently fold in the raspberries.
- Pour the lemon raspberry mixture over the crust.
- Bake for 25-30 minutes or until set.
