Mediterranean Vegetable Pasta Bake

A delightful and comforting dish that combines the bold flavors of Mediterranean vegetables with pasta, baked to perfection.

  • 2 cups penne pasta
  • 1 tablespoon olive oil
  • 1 zucchini, sliced
  • 1 bell pepper, chopped
  • 1 red onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the pasta according to package instructions until al dente. Drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add zucchini, bell pepper, red onion, and garlic. Sauté until the vegetables are tender.
  4. Stir in the oregano, basil, salt, and pepper. Cook for another minute.
  5. In a large mixing bowl, combine the cooked pasta, sautéed vegetables, and marinara sauce. Mix well.
  6. Transfer the mixture to a baking dish and top with mozzarella and Parmesan cheese.
  7. Bake for 25-30 minutes, or until the cheese is melted and bubbly.
  8. Let cool for a few minutes before serving.

Notes

  • For added flavor, you can include olives or sun-dried tomatoes.
  • Feel free to use any vegetables you have on hand.
