- 1 pound Brussels sprouts
- 4 slices turkey bacon
- 1 cup corn kernels
- 1/2 cup cotija cheese, crumbled
- 1/4 cup mayonnaise
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- 2 tablespoons cilantro, chopped
- Salt to taste
- Preheat your oven to 400°F (200°C).
- Trim the Brussels sprouts and cut them in half. Toss with olive oil, salt, and chili powder.
- Spread on a baking sheet and roast for 20-25 minutes until golden brown.
