  • 1 pound Brussels sprouts
  • 4 slices turkey bacon
  • 1 cup corn kernels
  • 1/2 cup cotija cheese, crumbled
  • 1/4 cup mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 2 tablespoons cilantro, chopped
  • Salt to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Trim the Brussels sprouts and cut them in half. Toss with olive oil, salt, and chili powder.
  3. Spread on a baking sheet and roast for 20-25 minutes until golden brown.
  4. In a skillet, cook turkey bacon until crispy, then crumble it.
  5. In a bowl, mix mayonnaise, lime juice, and crumbled cotija cheese.
  6. Once Brussels sprouts are done, toss them with corn, bacon, and the mayonnaise mixture.
  7. Garnish with chopped cilantro and serve immediately.
