Mexican Street Corn Salad

  • 4 ears corn, husked
  • 4 strips turkey bacon
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely chopped
  • 1/2 cup cilantro, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup mayonnaise
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • Salt to taste

Instructions

  1. Cook the turkey bacon in a skillet until crispy. Remove and crumble.
  2. Grill the corn until charred, then cut the kernels off the cob.
  3. In a large bowl, combine corn, tomatoes, red onion, cilantro, feta cheese, mayonnaise, lime juice, chili powder, and crumbled bacon.
  4. Stir well to mix all the ingredients thoroughly.
  5. Season with salt to taste and serve chilled.
