Mini Mushroom & Gruyère Pot Pies

Ingredients

  • 1 tablespoon olive oil
  • 1 cup chopped mushrooms
  • 1/2 cup chopped onion
  • 2 tablespoons all-purpose flour
  • 1 cup vegetable broth
  • 1/2 cup Gruyère cheese, shredded
  • 1 sheet of puff pastry
  • 1 egg, beaten

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, heat oil over medium heat. Add mushrooms and onions, cooking until soft.
  3. Stir in flour, then add vegetable broth, cooking until thickened.
  4. Remove from heat and stir in Gruyère cheese.
  5. Roll out the puff pastry and cut into circles to fit your baking dish.
  6. Fill the dish with the mushroom mixture and cover with puff pastry.
  7. Brush the pastry with beaten egg.
  8. Bake for 20-25 minutes or until golden brown.

Notes

  • For extra flavor, add herbs like thyme or parsley.
