- 4 medium potatoes
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup black beans, drained and rinsed
- 1 cup corn, canned or frozen
- 1/2 cup diced tomatoes
- 1 avocado, sliced
- 1/4 cup fresh cilantro, chopped
- 1 cup shredded cheese, optional
- lime wedges, for serving
- Preheat the oven to 400°F (200°C).
- Wash and cube the potatoes, then toss them in olive oil and spices.
- Spread the potatoes on a baking sheet and roast for 25-30 minutes.
- In a bowl, mix the black beans, corn, and diced tomatoes.
- Once potatoes are done, mix them into the bowl with the other ingredients.
- Serve in bowls topped with sliced avocado, cilantro, and cheese, if using.
- Add lime wedges on the side.
