  • 4 medium potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, canned or frozen
  • 1/2 cup diced tomatoes
  • 1 avocado, sliced
  • 1/4 cup fresh cilantro, chopped
  • 1 cup shredded cheese, optional
  • lime wedges, for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and cube the potatoes, then toss them in olive oil and spices.
  3. Spread the potatoes on a baking sheet and roast for 25-30 minutes.
  4. In a bowl, mix the black beans, corn, and diced tomatoes.
  5. Once potatoes are done, mix them into the bowl with the other ingredients.
  6. Serve in bowls topped with sliced avocado, cilantro, and cheese, if using.
  7. Add lime wedges on the side.

Notes

  • For extra flavor, add lime juice to the potato mixture.
  • Feel free to customize toppings to your preference.
