  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar
  • 1 cup pumpkin puree
  • 1 cup brewed espresso or strong coffee
  • 1/2 cup vegetable oil
  • 4 eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a cake pan.
  2. In a bowl, mix flour, baking powder, baking soda, spices, and salt.
  3. In another bowl, whisk together sugars, pumpkin, coffee, oil, eggs, and vanilla until smooth.
  4. Gradually add dry ingredients to the wet mixture, stirring until just combined.
  5. Pour batter into the prepared pan and smooth the top.
  6. Bake for 30-35 minutes or until a toothpick comes out clean.

Notes

  • For an extra kick, add a teaspoon of instant coffee to the batter.
  • Frost with cream cheese icing for added flavor.
