  • 2 cups cooked rice
  • 1 pound boneless, skinless chicken breasts, diced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 eggs, beaten
  • 3 green onions, chopped
  • 2 cloves garlic, minced
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Heat sesame oil in a large skillet over medium heat.
  2. Add garlic and chicken, cooking until chicken is no longer pink.
  3. Push chicken to side, and scramble eggs in the skillet.
  4. Add rice and soy sauce, mixing well.
  5. Fold in mixed vegetables and green onions, cooking for another 2-3 minutes.
  6. Season with salt and pepper to taste.

  • Use day-old rice for better texture.
