Salsa Verde Chicken & Rice Skillet

An easy one-pan dish featuring chicken, rice, and salsa verde.

Ingredients

  • 1 pound chicken thighs
  • 1 cup rice
  • 2 cups salsa verde
  • 1 cup chicken broth
  • 1 cup corn
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil
  • salt to taste
  • pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add chicken thighs and cook until browned on both sides.
  3. Stir in rice, salsa verde, chicken broth, corn, cumin, garlic powder, salt, and pepper.
  4. Bring to a boil, then cover and reduce heat to low.
  5. Simmer for about 20 minutes or until rice is cooked.
  6. Remove from heat and let it sit for 5 minutes before serving.

Notes

  • For extra flavor, marinate the chicken in salsa verde for a few hours before cooking.
  • This dish can easily be made with brown rice; just adjust the cooking time.
