1 cup pumpkin puree
1/2 cup sugar
1/2 cup brown sugar
1/2 cup vegetable oil
2 large eggs
1 1/2 cups all-purpose flour
1 tsp baking soda
1/2 tsp baking powder
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground ginger
1/4 tsp salt
1/4 cup brown sugar (for swirl)
1 tsp ground cinnamon (for swirl)
Instructions
Preheat your oven to 350°F (175°C).
In a large bowl, mix together pumpkin puree, sugar, brown sugar, vegetable oil, and eggs until well combined.
In another bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
Gradually add dry ingredients to the wet ingredients, stirring until just combined.
In a small bowl, mix together brown sugar and cinnamon for the swirl.
Pour half of the batter into a greased mini loaf pan, sprinkle with half of the cinnamon sugar mixture, then add the remaining batter and top with the rest of the cinnamon sugar.
Bake for 25-30 minutes or until a toothpick comes out clean.
Allow to cool before slicing and serving.
Notes
Ensure not to overmix the batter for a lighter texture.
Can be served warm or at room temperature.
