Slow Cooker Taco Casserole

A hearty and flavorful dish that brings the comfort of tacos to your dinner table.

  • 1 pound ground beef
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 packet taco seasoning
  • 2 cups corn chips
  • 1 cup shredded cheese
  • 1 cup salsa

Instructions

  1. In a skillet, brown the ground beef over medium heat. Drain any excess fat.
  2. Add the black beans, diced tomatoes, and taco seasoning to the skillet. Mix well and bring to a simmer.
  3. In the slow cooker, layer half of the corn chips, then half of the beef mixture, followed by half of the cheese and salsa. Repeat the layers.
  4. Cook on low for 4-6 hours until everything is heated through and the cheese is melted.
  5. Serve hot with additional toppings as desired.

Notes

  • For a vegetarian option, substitute the ground beef with lentils or more beans.
  • Add your favorite toppings like avocado, sour cream, or jalapeños.
