S’mores Cookie Bars

Indulge in the delightful combination of chocolate, marshmallows, and graham crackers with these S’mores Cookie Bars.

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups chocolate chips
  • 1 cup mini marshmallows
  • 1 cup crushed graham crackers

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until smooth.
  3. Add the eggs one at a time, beating well after each addition, then stir in the vanilla.
  4. In another bowl, whisk together the flour, baking soda, and salt. Gradually add to the creamed mixture.
  5. Fold in the chocolate chips, mini marshmallows, and crushed graham crackers.
  6. Spread the dough evenly in a greased baking dish.
  7. Bake for 25-30 minutes or until golden brown. Allow to cool before cutting into bars.

Notes

  • For extra marshmallow flavor, top with additional mini marshmallows before baking.
  • Store any leftovers in an airtight container to keep them soft.
