  • 2 pounds chicken thighs
  • 1/3 cup maple syrup
  • 2 tablespoons soy sauce
  • 1 tablespoon sriracha
  • 2 cups jasmine rice
  • 1 can (14 oz) coconut milk
  • 1 cup water
  • 1 teaspoon salt
  • 2 tablespoons chopped green onions

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix maple syrup, soy sauce, and sriracha.
  3. Place chicken thighs in a baking dish and pour the marinade over them.
  4. Bake for 25-30 minutes until cooked through.
  5. While chicken is baking, rinse jasmine rice until water runs clear.
  6. In a pot, combine rice, coconut milk, water, and salt; bring to a boil.
  7. Reduce heat, cover, and simmer for 15-20 minutes.
  8. Fluff rice with a fork and stir in chopped green onions before serving.
