Street Corn Chicken Rice Bowl

An easy and flavorful comfort food that combines chicken, rice, and street corn for a delicious meal.

  • 2 cups cooked rice
  • 1 pound chicken breasts, diced
  • 1 cup corn, grilled or roasted
  • 1 tablespoon olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced

Instructions

  1. In a large pan, heat olive oil over medium heat.
  2. Add the diced chicken and season with chili powder, smoked paprika, garlic powder, salt, and pepper.
  3. Cook until the chicken is no longer pink, about 7-10 minutes.
  4. Stir in the corn and cook for another 2-3 minutes.
  5. In a bowl, combine the cooked rice with the chicken and corn mixture.
  6. Top with crumbled feta, chopped cilantro, and a squeeze of lime juice before serving.

Notes

  • For added flavor, marinate the chicken in lime juice and spices for 30 minutes before cooking.
