  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup sugar
  • 3 packages (8 oz each) cream cheese, softened
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 2 cups fresh peaches, sliced
  • 1 cup fresh raspberries
  • 1/2 cup heavy whipping cream

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a mixing bowl, combine the graham cracker crumbs and melted butter; press into the bottom of a springform pan.
  3. In a large bowl, beat together sugar and cream cheese until smooth.
  4. Add vanilla extract and eggs, one at a time, mixing well after each addition.
  5. Pour the cream cheese mixture over the crust and bake for 50-60 minutes.
  6. Once cooled, top with sliced peaches and fresh raspberries.
  7. Whip the heavy cream until soft peaks form, then pipe over the top for decoration.
