Sundried Tomato and Feta Cottage Cheese Crustless Quiche

Delicious and easy-to-make crustless quiche with the flavors of sundried tomatoes and feta cheese.

  • 1 cup cottage cheese
  • 1/2 cup sundried tomatoes, chopped
  • 1/2 cup feta cheese, crumbled
  • 4 large eggs
  • 1/4 cup fresh basil, chopped
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the cottage cheese, sundried tomatoes, feta cheese, and fresh basil.
  3. In another bowl, whisk the eggs, black pepper, salt, and olive oil.
  4. Mix the egg mixture into the cheese mixture until well combined.
  5. Pour the mixture into a greased pie dish.
  6. Bake for 30-35 minutes or until set and lightly golden on top.
  7. Allow to cool for a few minutes before slicing and serving.
