  • 2 tablespoons olive oil
  • 1 diced onion
  • 2 cloves garlic, minced
  • 1 zucchini, sliced
  • 1 bell pepper, chopped
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the penne pasta according to package instructions; drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add onion and garlic, and sauté until soft.
  4. Add zucchini, bell pepper, and cherry tomatoes. Cook for about 5 minutes.
  5. Stir in oregano, salt, and pepper. Mix well.
  6. Add marinara sauce and cooked pasta to the skillet. Stir to combine.
  7. Transfer the mixture to a baking dish. Top with mozzarella cheese.
  8. Bake for 20-25 minutes until the cheese is bubbly and golden.
