  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 2 cups chopped carrots
  • 2 cups chopped celery
  • 4 cups vegetable broth
  • 2 cups diced potatoes
  • 1 cup frozen peas
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 cup plant-based milk
  • 3 tablespoons cornstarch
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onions and garlic, sauté until softened.
  2. Stir in the carrots and celery, cooking for another 5 minutes.
  3. Add the vegetable broth, potatoes, thyme, and rosemary. Bring to a boil.
